How about the Phidget?
http://www.phidgets.com/products.php?product_id=1048

so something like this is needed to get the info from the thermocouples to the computer (eg some other thing is needed to plug them into, then from that its goes to computer correct?)

Right. The leads from the thermocouples have plugs on them.  Remove them and attach the bare wire to the terminals on the Phidget.  The plug coming the Phidget is hooked to your laptop via a USB.  It's included with the Phidget.  There's also a clear plastic case for the Phidget that's a good idea to get too. It's on that same page.

Nice Nice, and other than that you think my list looks good i might add a Digital ET aswell just so i have the option to switch it with the analog one.

Yeah, I think it looks good but others might chime in here.

You're gonna love your Huky.

The "extra drum" could be solid or perforated; assuming there would be one of each. The perforated roaster comes complete with the shutter installed. Not sure if a customer can get a solid drum with the shutter.

The drum are meticulously constructed, well worth the price. The two versions use different drum motor speeds, how is that question managed?

Did I miss something or have you not indicated whether you are going with the solid drum and fast motor or the perforated drum and slow motor?

You can also get two mastech ms6514, won't always be tied to a computer and save about 30bucks.

As @day said, you can have other device in place of the phidget. Mr Li sells the "centers", quite pricy but goodmaterial, works with or without computer. For the computer, you need to buy the special USB cable as well.

I was analog thermometer friendly, but now, if I had to order again, I would take all three digital probes.

For the drums, same questions and comments as Hankua and Susan :)
