Since we are about to shut down for a month of R&R, I thought I would mention that I have decided that the Yes On Fan Control stance has won me back over to their side.   The Variac is back in place, and mostly I just keep it set to keep a very light flow of air moving through while I roast.  I'm not using it to control the roast, but just to tame the fan.

So...my doorstop is back in the action :-))))
