Uneven/Splotchy Beans

Lately my DP/Honey Processed beans have been coming out wonderful. Nice even roast appearance, pretty ROR curves, cups well, etc.

However, I've been having troubles getting any Washed Process bean to come out with any sort of evenness in color. They just look like really mangled and splotchy. If I had to describe the taste, I would say they all have been kinda underdeveloped/too acidic. It just seems like these washed Central American beans like the Guats, Costa Ricas should be the more even beans not my DP Africans... I've attached pictures of a couple latest curves and the beans themselves. Based off the attached graphs,might my Dev Time be to short? Bean Drop temp too low? DE to Long/short? I just can't seem to figure it out!

 Any advice would be great! Thanks Huky Users!

Have you tried extending the MAI phase?

I've taken it to around 4 before but still not the best results yet...

Did it taste better? If so, maybe stretch it out a little more. Costa Rican beans are known to be bright.

Not a perforated Huky user; so it's just a guess. The profile's fine on paper but the taste not to your liking; ie: a little green.

Solution: more heat and air combined. You've got a hair dryer in a box so to speak, only too much air will rob the drum of heat, too little air restricts convection (how your's works for the most part).

If you can find a nice balance point for the fan; run the whole profile on the same setting except for the very end. Then use the heat dial, try cranking it up all the way after the turning point. Also turn on the projected LCD's so you can see where it's going. When you hit the end of drying stage or "bread stage" start reducing heat (I use 4,3,2,1 kPa) on my solid, it's less complicated.

One way to find a balance point is to crank up the gas after the turnaround point, and fiddle with the air setting that results in the highest ROR.

The reason for my suggestion is the beans sound like they're under roasted in the inside. Time to start formulating a "plan b" and trying out some new tricks.
