There is a 80% rule, where most roasters work better at less than full capacity. There are exceptions to every rule however and giving the Huky a little help doesn't hurt like: roasting indoors, away from drafts, cold garages, insulation, etc.

I know I am making it harder on myself, but I am interested in solving the issue of running at capacity. The idea of insulation is a good one.

I have found better coffee flavors using less gas flow (3.5kpa max) in my perforated drum and stretching out the roast. I'm using 400gm batches and my roasts are taking 13-15 min going to second crack. Air flow is usually at 40 with my variac and the grate is closed for the entire roast. I will try a lower turning point (175f) to see if that makes a difference in my roasts. Thanks for the tips.
