You'll want an exhaust hood, unless you have something else lined up like a Cyclone.

It would always confuse me when Mr. Li called it an exhaust hood as I was picturing something on top of the Huky, a hood of some sort.

I like vent bowl better, that makes a better word picture in my mind.

1 Huky 500T with solid drum, 72 RPM motor, 1 fan, 1 tray, 1 funnel         

Please replace analog thermometer (ET) with thermocouple installed

1 MET thermocouple installed                                                                       
1 extra tray                                                                                               
1 extra fan                                                                                             
1 extra funnels                                                                                               
1 extra motor, 72 RPM   
1 vent bowl (exhaust hood)                                                     
1 infrared NATURAL GAS stove


I'll purchase the Phidget and a Variac seperately.  Any specific model Variac recommended?

That was my order exactly. I don't use the extra fan or motor- they're just waiting for the first ones to wear out. About a hundred roasts later the two originals are both going strong.

Variacs are kind of expensive.  I mean relative to the Huky they're not but still. On Amazon they're $65.  I have my eye on this one for $51.95.

I think that's the same one I am using.
I'm quite sure I paid more than that for it, so it looks like a deal to me :-))
