Actually, I never used them anyway. I find it quite beneficial to draw in cool air from the top as it keeps the fan cooler! 

My question is how do you exhaust smoke out of the roasting chamber to the outside of your living space if your bean drop chute is left open?

Sorry, good question.

I can only speak from my experience with a solid drum, but I have never closed the top valve during roasting and have never had smoke or chaff come out while the fan is running.

try it, open the valve during a roast and you will see the chaff and smoke being sucked into the mid pipe on your tee!
