Kenya Profiles
« on: January 07, 2015, 07:04:14 AM »
For some reason, I can't roast Kenya worth a crap....My profiles look exactly like successful profiles of other people...Care to share what you guys/gals are doing?

Do you like a lot of brightness? I've read in a few places that Kenyas can benefit from a longer drying phase but I'm guessing it was a little too long in the profile you posted. Maybe more like 4:30 to 300F?
The charge temp in that profile is a lot lower than what I use too- like 100+F. Bringing that up will change the whole ballgame  :)

Longer drying phase, quick to 380ish, then slow for 1c, ride 1c until done and a 5 to 8 degree 'coast' up to 2c or dump before, based on brightness.

How fresh the bean was makes a huge difference in the drying phase. If there is a bunch of moisture I've had it 'green' the final cup. It wasn't until I could see the moisture in the exhaust that I noticed I needed to be much more agressive on the dry with the fan and not heat.

Boot Coffee had a blog on the drying phase effects, I'm looking for it now.

Edit: Doh you have to be registered and I didn't renew lately

What was wrong with the roast, tastewise?

Off flavors.. Really no good flavors at all.. Kinda flat..I'm not good at describing it.. I mainly know "it's great or it sucks"

Was it possibly undeveloped?

I got dinged for under development with a Kenyan last year on HB. Went 1:15 and 1:30 development times, and should have extended the drying time or development (2:00). Only problem, I bought enough beans for 2 roasts.

I think the total roast time should be the same with 2:30 roast development as 1:30 RD. Or at least try out longer drying times/ramps if the roast drops during/end of 1st crack.

I'm pretty guilty of ending super light roasts too early, especially with DP's that roast fast. Total fruit bomb if you hit it right. ;D

Quite possibly for sure....Here is my next roast with it...Have yet to try it..Will give it a go tomorrow most likely.

ETA: Now that I look at both profiles, they aren't much different...Oh well...Maybe it's enough to be the difference.

ok, I was wrong.. This Kenya came out great.. Sweet sweet sweet.. It didn't have much aroma or smell, but was excellent when brewed.. Crazy how sweet it got as it cooled.
