I am making a control panel similar to this!  I am taking a little different approach though.  I am only switching exhaust fan, cooling fan, huky motor, and a solid state variable speed controller of the same brand as yours.  I am using a 4 gang electrical box and using combination switch/outlets and wiring so the switch controls the outlet.  I will plug each device I want to switch into its dedicated outlet.  The exhaust fan will take two slots (one for the combo switch/outlet, and next to it I will install the speed controller).  I am feeding power in a series using a sacrificial extension cord so none of it is hard wired.  I'll post some pictures when I'm done if anyone is interested.

 Is the speed control for exhaust or drum speed? I would like to make a control panel to clean up my counter and have speed control for drum and exhaust. Im currently using a variac. I had a router speed controller from my air popcorn popper mod but could not control the fan very well.

What are you using for the varic Control dial and how did you mount it?

Working on my cart and Control panel and I'm trying to figure out what and where to mount it.

Here is my control panel in finished configuration.  There is one plug that needs to be plugged into wall to service fans and roaster so it can be portable.

LOL... I like your controls here!  I don't' know exactly how my controls will lay out, however, these are very clean.
