Help me set up Artisan Please

Hi all,
Please help i'm in need of some assistance with Artisan. I've spent the past few days trying to get this program up and running properly. Ive tried 7.4,8.0 and now i'm on 9.5. Ive scoured this forum and others for info to help set up but still have issues.

BOY do i need help with Artisan set up. These graphs are crazy ugly!  These graphs were created with Artisan 7.4 or 8.0 Gas and Fan used to be down below now they seem to be attached to ET  using 9.5? I believe 9.5 is the newest version i can use with my mac OSx 10.6.8? I read all the info about Artisan set up on this forum and on a few others but can't seem to find the fine details of set up. If someone would like to help me straighten out the artisan set up that would be awesome.
1. How do i install the Gas and Fan settings back to the bottom with the button label?
2. How do i remove the labels on the MET graph?
3. How do i move the roast scope label from center to left side?
4. I obviously hit some wrong buttons or something but how do i change the BT,ET, Deltas,and MET graph lines back to lines and change the colors?
5. And what is the best way to save this info so if the program crashes again i don't have to manually reload everything for the 5th time?
6. Once i complete a roast what is the best way to save the info for later review?
I have a bunch more questions like, spikes in Deltas so bad its hard to read the BT.ET,MET but this would be a great start.
Once i have it set and up and roasting then I can tackle the other question.

Go to Events > Config

At the top of the page, second row the last entry on the right is Bars.  Set it to Value

Can you point out the labels you mean?  A screen shot would be good.  I don't see any, so I am guessing we are looking at different lines for MET ???  or something

Once again Thank you SusanJoM,
That one key stroke fixed both problems. FAN and GAS back down below. Labels gone on, and my bad, ET not MET. Except one label "E" Prob that yellow event button that showed up that I can't get removed.
So that takes care of questions 1,2,and 4. Now if I could get some more help with Questions 3,5,and 6 I can put this to the test tonight while i roast 5 batches for the Huky comp.

Unfortunately that's all the help I can give.
Maybe someone else is using an old version of Artisan.

Thanks SusanJoM so far so good I'll wait for others to reply that may still be using 9.5. I'm stuck with 9.5 until i can upgrade my computer.

Well, I missed something, I thought you were still back in the 7s or 8s.

So, very quickly, here are a few tips: 

Look under the HELP Tab to see if you have Load Savings, Save Settings and one other.  That should take care of #5.

For #6 Look under the File Tab. 
Save  will give you an .alog file which is your entire roast profile.
Save Graph will give you a .png file.

For #4 start at Config > Colors.

And that's all ....again...

SusanJoM to the rescue! Thanks so much! I'm cranking up the HUKY for a late night roast session:) Hope to roast some palatable Burundi for the HUKY Comp.

I did find all the editing windows in Artisan to get my logging up and running all thanks to you. I was able to get 7 roasts logged last night and into the morning. Now I just need to control this little roaster a bit better. Wanted to get a few light roasts in but couldn't seem to put the brakes on soon enough. Every roast hit 422F or higher. Its like a freight train once it gets going. But it sure was fun. I did notice that I'll have to remember to adjust the roaster to correspond to the events I log on the computer. I forgot a few times to adjust the roaster after I logged an event. I wish there was a way that the buttons that are depressed in a certain area i.e. fan, gas, damper , shutter would stay depressed until that area is changed. That way at a glance I would know what I currently  have selected. Is there a way to do that ?

When I click on any of the buttons, I think it stays 'lit' until I click on another.
And when I was reading the Release History Notes a bit ago I think I saw where that was added in 0.9.8.

If I'm right, you will have that option when you upgrade your version to at least 0.9.8.

OK! Awesome and thanks. I guess i should really be paying more attention to the roaster but some times during multiple roasts gotta weigh, package, prep for next batch, and edit notes from last roast.
