BT & MET Temp Issues

Guys,

I'm just starting up my Huky for the first time and I'm having issues regulating temperature.  My BT won't go above 335 F but my MET is reading 550 F but the analog drum temp dial is reading 225 C (437 F).  What the heck am I doing wrong?  Both BT and ET should be around 400-450 if i've read everyone's roast profiles correctly.  I have the gas barely even on and the fan and 65v using a Variac.

Some help would be awesome guys!

If I put my gas at 1.5 my MET jumps to 580 and my BT is like 370.

That's with the fan up 100%

At that point I was trying to cool it to bring it back down. I had turned the gas down before I hit 100% on the fan.

I figured out the issue. I had a bad probe. Artisan was saying much higher readings than I was getting with a manual probe I hate.  I swapped out the probe and works much better now. I can get MET and ET within 30 degrees of eachother which is much better.
