About to Order, Brain Swimming!

Hello, everyone.  I've been lurking here for a few weeks and reading all about what to order.  I'll be opening a mico-roastery this autumn, and I'll be purchasing a new Huky 500T to use as my sample roaster in the early going.

I'm ready to place my order, but I feel less sure about what to have Mr. Li include in my package than ever.   :-\

I will want to run Artisan from my laptop with my Huky.  I know I want the solid drum (to more closely replicate my 12kg US Roaster Corp production roaster).  I don't think I'm all that concerned about the MET side of things, though.  Really just the two probes (bean temp and exhaust temp).  I do want to have good control of fan speed, so I'll be sure to purchase a Variac. 

Any suggestions on what I'll need to order given the above would be greatly appreciated.

Do you want the luxury that a second fan/tray provides? It takes up more counter space, but not having to switch between exhaust fan and cooling is a feature some people appreciate. Others don't mind making the switch.

Be sure to order the exhaust hood if you aren't using your own exhaust. If you use Mr. Li's exhaust hood, you are on your own to vent it.

Yes, I'll want that second fan and tray.  I'll have plenty of space in the roastery for that setup.

What are you going to use between the HUKY and Artisan?
A phidget?
Amprobe?
Center?

That was going to be my next question.  I was leaning toward a Phidget.  Which model would I want for just the two probes (i.e. bean temp and exhaust temp)? 

Also, is there any way to chart gas pressure from the Huky into a Phidget?

I think if you are going to get a Phidget it makes sense to go ahead and get the third T/C and monitor MET as well as ET and BT.  If you go the Phidget route, you have the option of a unit which will read one (1051)  or a unit which will read four (1048).
Everyone I am aware of who uses a Phidget at all uses the 1048;  it's quite sweet and is recommended by Marko (Artisan's creator) as being the best interface to Artisan.

I have ordered the parts but have not yet done the modification;  who knows if/as/when I ever will get to it, but I have good intentions.

Seriously, I just like having all of the information I can glean about what happens inside the HUKY when I make adjustments to heat or to air.  Why you would NOT gather that data beats my backyard 50 ways....

Here's what I think my order should look like based on the above discussion.  Please let me know if I'm missing anything:

1 Huky 500T with solid drum, 72 RPM motor, 1 fan, 1 tray, 1 funnel         
Please replace analog thermometer (ET) with thermocouple installed
1 MET thermocouple installed                                                                       
1 extra tray                                                                                               
1 extra fan                                                                                             
1 extra funnels                                                                                               
1 extra motors, 72 RPM   
1 vent bowl (a.k.a. exhaust hood)                                                     
1 infrared NATURAL GAS stove

You'll want an exhaust hood, unless you have something else lined up like a Cyclone.
